Pasta with Tomato and Bacon


Ingredients

• 2 slides of bacon
• 1 clove garlic, minced
• extra virgin olive oil
• 250 grams cherry tomatoes (or half can of chopped tomatoes)
• 1/4 pounds spaghetti
• a handful of chopped fresh parsley
• sea salt and freshly ground black pepper to taste
• Parmesan cheese, for grating

Directions

1. Heat the pan and cook the bacon until crisp and golden. Break into small pieaces and set aside.
2. Drain bacon grease, and return pan to heat. Saute garlic over medium heat until tender. Stir in bacon and tomatoes. Reduce heat and cook for another 10 minutes.
3. Meanwhile, cook the pasta in large pot of lightly salt water. Add pasta and cook for 8 to 10 minutes or until al dente. Drain.
4. In the other hand, on the cooking tomatoes sauce, stir in parsley. Add salt and pepper to taste. Cook another 5 minutes more. Toss with hot pasta.
5. Lastly, top with grated Parmesan cheese when serving.
